Cooking with Honey
Cooking with Honey
Honey is a wonderful ingredient for cooking. This golden liquid, produced entirely from the sweet fragrant nectar that bees collect from blossoms, is a natural sweetener and an excellent energy source. Honey adds flavour and prolongs freshness in baked goods.
Honey is a natural humectant, which means it has the ability to absorb and retain moisture, slowing down your baked goods from drying out and becoming stale. Cakes and cookies made with honey are more moist and stay fresh longer than those made with granulated sugar. This means that baking can be done ahead of time.
Baking with Honey

When using honey in cake baking, it is best to either use recipes that have already been tested with honey, or to start by only replacing a portion of the sugar. As a general rule, reduce the liquid in the recipe by 1/4 cup for each cup of honey used to replace sugar. Liquids include water, milk, coffee, eggs and juice.
