Honey is a wonderful ingredient for cooking. This golden liquid, produced entirely from the sweet fragrant nectar that the bees collect from blossoms is a natural sweetener and an excellent energy source. Honey adds flavor and prolongs freshness in baked goods.

Honey is a natural humectant which means that it has the ability to absorb and retain moisture, slowing down your baked goods from drying out and becoming stale. Cakes and cookies made with honey develop a moist texture and stay fresh for a longer time than they would if made with granulated sugar. This means that baking can be done ahead of time.

Honey is also sweeter than sugar while having less calories which means that you can use less honey when baking and still retain the sweetness in your favorite recipes.

For best results, use recipes developed for honey. When substituting honey for granulated sugar in recipes, begin by substituting honey for up to half of the sugar called for in the recipe. With a little experimentation, honey can replace all the sugar in some recipes.


When baking with honey, remember the following:

  • Reduce any liquid called for by 1/4 cup for each cup of honey used.
  • Add 1/2 teaspoon baking soda for each cup of honey used.
  • Reduce oven temperature by 25¬?F to prevent over-browning.
