Cooking with Honey
Honey is a wonderful ingredient for cooking. This golden liquid, produced entirely from the sweet fragrant nectar that bees collect from blossoms, is a natural sweetener and an excellent energy source. Honey adds flavour and prolongs freshness in baked goods.
Honey is a natural humectant, which means it has the ability to absorb and retain moisture, slowing down your baked goods from drying out and becoming stale. Cakes and cookies made with honey are more moist and stay fresh longer than those made with granulated sugar. This means that baking can be done ahead of time.

As honey is sweeter than sugar you can retain the sweetness of your favourite recipes while using less calories.
For the best results, use recipes developed for honey. When substituting honey for granulated sugar in recipes, begin by substituting honey for up to half of the sugar used in the recipe. With a little experimentation, honey can replace all the sugar in some recipes.
When baking with honey, remember the following:
- Reduce liquids used in the recipe by 1/4 cup for each cup of honey used.
- Add 1/2 teaspoon baking soda for each cup of honey used.
- Reduce oven temperature by 25°F to prevent over-browning.
Science shows that people sleep better when they eat honey before bedtime.
