


For easier pouring and less waste, use a greased spoon or cup when measuring honey. You can dip your measuring spoon in oil before filling it with honey, and reuse the cup you previously used to measure cooking oil, melted butter or egg white.
When adding honey to creamed shortening or beaten eggs, add the honey slowly, in a fine stream.
Most honey will eventually crystallize. Liquid honey that has turned solid has not spoiled. It can be changed back to a liquid by heating it gently in a double boiler or microwave. Never heat honey over direct heat as it may scorch, which alters the flavour.
