Honey Ginger Cake
Want to end the meal with a zesty tang. This cake will do the trick.
| 1/2 | cup | melted butter | 120 | ml |
| 1/2 | cup | plain yoghurt | 120 | ml |
| 1/2 | cup | honey | 120 | ml |
| 1/2 | cup | brown sugar | 120 | ml |
| 1 | grated lemon peel | 1 | ||
| 2 | cups | flour | 480 | ml |
| 1 | tsp | baking powder | 5 | ml |
| 1/2 | tsp | salt | 5 | ml |
| 4 | tsp | fresh ginger root (peeled and grated) | 20 | ml |
Preheat oven to 350 F - 180 C
- Blend sugar and honey into butter
- Add yoghurt, eggs, lemon peel and ginger - Mix well
- Sift together flour, baking powder and salt.
- Fold liquid ingredients into dry mixture.
- Pour into greased 9" pan
- Bake 30-35 minutes
- Cool and remove from pan
- Dribble with Honey Syrup and serve
