Honey Cranberry Tarts
This is a quick and easy recipe that the grandkids love, so we keep the ingredients in the freezer!
- Put approximately 19 - 3" frozen tart shells out on a baking tray.
- Put 4-6 frozen or fresh cranberries in each shell (you can also mix with blueberries).
- Whip one egg with 150 ml of honey.
- Mix in 4 tablespoons of very soft butter and 1 tsp of vanilla.
- Stir in 1/2 a cup of chopped pecans.
- Drop the mixture on the berries with a spoon.
- Bake in 350 degree preheated oven until the pastry is light brown. Bake for approximately 25 minutes, depending on if the berries are frozen or not.
