Honey Cranberry Tarts

This is a quick and easy recipe that the grandkids love, so we keep the ingredients in the freezer!

 

Directions

Put  3" frozen tart shells out on a baking tray (approximately 20 shells).

Put 4-6 frozen or fresh cranberries in each shell (you can also mix with blueberries).

Whip one egg with 150 mL honey. Add 4 tablespoons of very soft butter and 1 teaspoon of vanilla essence. Stir in 1/2 a cup of chopped pecans.

Drop the mixture onto the berries with a spoon.

Bake at 350°F (180°C) until the pastry is light brown (approximately 25 minutes, depending on whether the berries are frozen or not).
