Honey, Banana and Pecan Cake
Honey adds extra flavour to your baking - you can taste that this is no ordinary cake!
Ingredients
125 g butter
1 cup honey
3 eggs
3 mashed bananas
2 teaspoons vanilla essence
2 ½ cups soft wheat flour
1 teaspoon baking soda
2 teaspoons baking powder
½ teaspoon salt (optional)
1 cup yogurt
½ cup pecans
Directions
- Cream together butter and honey.
- Add eggs, mashed banana and vanilla essence.
- Mix together flour, baking soda, baking powder and salt in a separate bowl.
- Add creamed mixture and yogurt to dry ingredients and beat well.
- Mix pecans into the mixture.
- Pour into a greased 9 x 13" pan.
- Bake at 325°F (160°C) for 25-30 minutes.
- Allow to cool and then frost.
Icing
60 g butter
100 g drained yogurt
1 tablespoon honey
175 g cream cheese
1-2 teaspoons vanilla essence
Cream together and whip until fluffy.
