Honey can last indefinitely if it is in a sealed container. The low water content in honey prevents molds and bacteria from growing. Honey from 3,300 BC has been found in Egyptian pyramids.
- Honey will crystallize overtime, however it can be reliquified by heating gently.
- Honey may also separate into 2 layers if kept at higher temperatures (like too close to your stove). If this happens, gentle heating and mixing will return it to a normal liquid state.
- If you don't want to use your liquid honey for a while, put it in the freezer. This will keep it from crystallizing.
