Clover plants provide much of the honey produced in Canada. Depending on location and source, clover honey varies in colour from water-white to extra light amber and has a mild, delicate flavour.

Alfalfa Blossom Honey
Alfalfa is a legume with mostly blue-purple flowers, but some yellow and red as well. Alfalfa honey is extra-white or white in colour and has a fine flavour. The honey also has good body, which makes it a perfect table honey. |

Creamed Clover Blossom Honey’s natural stable state is in a solid form. By guiding the crystalization process, we cause the crystals that form to be very small. This makes the honey easier to spread and not so runny. Alfalfa, Blueberry and Blackberry are also available as creamed honey. |
Why is our Honey so Good?
Our honey is delicious because we handle it so carefully.

Honey is a complicated food. It is hardy enough to last thousands of years and still be edible. It is sensitive enough that it starts to get burned at just over body temperature. Honey pots containing edible honey have been recovered from Egyptian tombs. Left at room temperature, honey will keep indefinitely.
Fireweed Honey
Fireweed is one of the most sought after honeys.

Fireweed is a beautiful wild, pink-flowered plant. As its name indicates, it is one of the first plants to grow in an area after a forest fire. Often you can find huge pink expanses in the mountains around the Fraser Valley. Honeyview Farm will take beehives up into the mountains to try and collect this honey. It can be a tricky business as the only access can be unused logging roads with steep dropoffs on either side.

Ginger and Honey - Two Healthy Foods

Ginger has been recognized for centuries as an effective remedy for the prevention and treatment of nausea. Maybe combining it with honey doesn't sound that tasty, but don't be fooled - Honey & Ginger is delicious! Use it as a spread or glaze, or add to hot water and make yourself a tasty, soothing drink. A Honey & Ginger drink is especially good when you have a cold.
